Description
Soft, flavorful sourdough flour tortillas that are as satisfying as they are versatile. Naturally fermented with Leaven Instant Sourdough, they’re easier to digest for many people and bring all the gut friendly benefits of traditional sourdough fermentation. Perfect for quesadillas, burritos, wraps, tacos, or any meal that calls for a fresh, homemade tortilla.

- Cast Iron Pan or Heavy Bottom Stainless Steel Pan
Dough Ingredients (Amount – Baker’s %):
- 395 g (3 1/4 C + 2 Tbsp) All Purpose Flour – 100%
- 240 g (1 C) Room Temperature Water – 61%
- 65 g (4 1/2 Tbsp) Neutral Oil (Such as Avocado Oil) – 16%
- 6 g (1 tsp) Sea Salt – 1.5%
- 0.4 g (Scant 1/4 tsp) Leaven Foods Instant Sourdough – 0.1%
Instructions
- Mix Dough: Add all of the ingredients to a medium mixing bowl and mix with a rubber spatula until no dry flour remains and a shaggy dough forms. Turn the dough onto a lightly floured work surface and knead for 2 – 3 minutes, until smooth, dusting with small amounts of flour only as needed to prevent sticking.
- Ferment: Transfer the dough to a lightly oiled bowl. Cover with plastic wrap or a towel and ferment at room temperature for 14 -16 hours.
- Portion & Shape: In the morning, divide the dough into ten 70 g pieces. Shape each piece lightly into a ball, then gently flatten into a disk. Cover with a towel and let rest for 15 minutes.
- Cook: Using the rolling pin and enough flour to prevent sticking, roll the dough balls out into 10” circles. Preheat a cast iron pan (or heavy bottom stainless steel pan) on medium high heat until very hot. Place a tortilla onto the hot cooking surface and cook for 30 seconds, until bubbles begin to form. Flip the tortilla and let cook for another 30 seconds or until brown spots start to form. Flip over one more time and cook for 10 seconds. As each tortilla finishes cooking, stack it inside a clean kitchen towel to trap steam and keep the tortillas soft and pliable.
Notes
- Store tortillas tightly wrapped or in an airtight container at room temperature for up to 2–3 days. Reheat briefly in a hot skillet before serving.
