A bright and herby chicken salad pita to get you through the hot summer months!

- 1 cup Greek Yogurt
- 1 cup Italian Flat Leaf Parsley
- 1 cup Mixed Soft Herbs (Chives, Mint, Dill, Etc.)
- 1 Tbsp Olive Oil
- 2 tsp Capers
- Zest of 1 Lemon
- Juice of 1 Lemon
- Salt and Pepper to Taste
- 1 Head Romaine Lettuce - Shredded
- 1 Small Radicchio - Shredded
- 1 Shallot - Thinly Sliced
- 1/4 cup Kalamata Olives
- 1/3 cup Crumbled Feta
- 1 Roast Chicken, Meat Shredded or Chopped
- Crumbled Feta
Instructions

- Prepare the Pita: Make sourdough pita from this recipe.
- Make the Dressing: Add all dressing ingredients to a blender or food processor and blend until smooth. Taste and adjust seasonings as needed.
- Dress the salad. Add about ⅓ cup of the green goddess dressing and toss to coat. Continue adding dressing until the salad is dressed to your liking.
- Assemble the sandwiches. Open each pita and fill it with the dressed salad. Add shredded or chopped roast chicken, tucking it into the salad mixture.
- Finish and serve. Top with a little extra feta and a spoonful of dressing, if desired. Serve immediately.
