Our process starts with collecting snapshots of fermentation. Samples are generated under various conditions throughout the entire fermentation process to ensure we capture how the microbial ecosystem interacts and changes. No different from familiar “macro“ ecosystems like rainforests or coral reefs, microbial ecosystems contain a community of different microorganisms that form beneficial and competitive relationships which allow the ecosystem as a whole to thrive.

Using next-generation DNA sequencing and chemical spectrometry we explore each sample to uncover how many and which microbes are present, which compounds from the raw ingredients the microbes are consuming, and what molecules they are producing as they ferment the food. This vast amount of information acts as input for our proprietary computational biology platform which identifies the key microbial species in each fermentation and how the community of microbes are interacting and changing across time. The result is a blueprint to functionally reconstruct the original fermentation, which we provide in a cost-effective, concentrated, and defined format.

The final product is a collection of microorganisms designed by nature, carefully curated to work in harmony, fermenting raw ingredients into foods that are flavorful and healthful. Each product is an exact replication of what nature intended — crafted without genetic modification and without cutting any corners.
